Essentially, cucina povera aims for respect towards the ingredient and promotes a style of food that is more farmhouse than big city.

Cucina povera aims for creativity through simple technique, embraces constraints, seasonal changes, and responsibility. Using each ingredient so that there is the least amount of waste.
